Something Light and Yummy!


I hope everyone had a wonderful Thanksgiving!  I know I sure did. Spent time with family, and way too much food.  

Now that we are getting back into the swing of things, I wanted to make something for dinner that was not only light but healthy too.  This is what I came up with!

I'm not sure what to call it (I'd love your help!), but I can tell you one thing, it sure was good.  It was exactly what I was looking for.

Here is the recipe for you:



Your favorite noodles (I used Ronzoni Garden Delight tricolor rotini)
Package of mild italian sausage
3 bell peppers (I used orange, red and yellow) - sliced into strips
1/2 cup of your favorite spaghetti sauce
3 cloves of garlic - minced
salt and pepper
1/2 cup water
1 tbs. butter

First things first, get some water on to bowl.  While you are doing this, set a skillet to medium high heat.  Once your skillet is nice and hot, place the sausages on it cooking 3-4 minuets per side.  Now that they have some nice color on them, put the water in the skillet and turn your heat to medium low. Put a lid on that sucker and allow it to cook for 12 minuets.

By this time, your water should be boiling away.  Put a nice handful of salt in there (Italians always say to make the pasta water as salty as the sea) and dump your pasta into the water.  Make sure you give your pasta a quick little stir to unstick the noodles from one another.

While everything is getting nice and happy in your pot and skillet, put the butter in a pan on medium heat.  Next, put the peppers and garlic in with the butter.  Sauté those bad boys till they are starting to release their natural juices.  Add a little salt and pepper to taste.  Put a lid on the pan and allow the juices to steam the peppers.

Once your 12 minuets are up on the sausage, take it off the stove and allow it to rest for a couple of minuets.  This will make the juices absorb back into the meat and you won't lose it all when you cut into it.  Once it has had time to rest, cut them diagonally and add them to the peppers.  

Now add the sauce and get everything nice and hot again.

Drain your pasta and add back to the same pot in which it came from.  

Once your sauce, sausage and peppers are nice and hot, add them to the pasta and mix everything together.  Enjoy!!
